With everything attached I was able to weigh the airplane. These pictures show the setup. I bought three identical scales from Target with a capacity of 400 pounds each. They are all within a pound or two of each other at 250 pounds and they each give excellent repeat results. I may go ahead and calibrate them with some standard weights in the future but I doubt that will change my results. You can see in the pictures that each scale has is a different height off of the floor with flat roll on/off areas to match. The plane was nice and level while being weighed.
